Spring Tea Recipes

Here are some delicious Spring tea recipes to enjoy either for your own tea time, or to make for spring tea parties.

First up is

Wake Up to Spring Tea  

Makes 4 cups of tea

2 tablespoons dried nettle leaf
1 tablespoon dried burdock root
1 tablespoon dried calendula flower
1/2 tablespoon dried lemon peel
1/2 tablespoon dried, seedless rose hips
1/2 tablespoon dried rose petals

Combine all ingredients and store in an airtight container.

To make the tea: For 1 cup of tea, pour 1 cup of boiling water over 1 rounded tablespoon of the tea blend. Cover and steep for at least 20 minutes (ideally 4 hours or overnight). Strain and sweeten with honey, if desired.

You could also infuse all 4 cups at once (a quart mason jar works well) and sip it throughout the day.

Recipe Notes

  • To substitute fresh herbs, use 3 to 4 times the amount of dried herbs called for.

Lemon Spring Tea

Ingredients

7 Tea bags
2 cups Granulated sugar
2 cups Lemon juice – fresh
5 cups Boiling water
2 cups Vodka (optional)

Directions

1.Bring water to a boil in a medium saucepan.

2.Place tea bags in water and allow to steep for 5 minutes.

3.Remove tea bags and stir in sugar until dissolved.

4.Add lemon juice and place in refrigerator.

5. Serve over ice.

Add the vodka for a fun adult drink!

Garnish with Morton Kosher Salt preserved lemons.

Garnish Recipe ingredients:

12 Lemons
6 Tbsp. Morton Kosher Salt
1 cup Lemon juice – fresh
Directions:

Trim the ends of each lemon. Quarter each lemon, slicing them down just over 3⁄4 of the way leaving lemons attached at the end.

Pour one teaspoon of Morton kosher salt into the cavity of each lemon.

Place the remaining 2 tablespoons of Morton kosher salt in the bottom of a glass mason jar.

Place lemons in the jar, pressing down the lemons to allow the juice to begin filling the jar.

The jar should be halfway filled with lemon juice. If needed, use additional lemon juice to bring it to the halfway point.

Screw the lid on and let it sit at room temperature for 48 hours, shaking it and rotating the jar upside down/right side up a few times.

Hawthorn Berry, Lemon Rind and Lime Blossom Tea

Makes 2 cups
This tea has a slight sweet-to-sour taste that warms the body. Tests in Japan show that hawthorn berries have positive cardiac effects, reducing blood pressure and the heart rate. It is also useful in the treatment of edema and dyspnea (shortness of breath). Lemon rind contains citrus flavonoids that improve varicose veins and are antihistaminic. Lime blossoms also have cardiac properties, reducing blood pressure and helping nervous disorders.

1 tablespoon dried hawthorn berries
½ teaspoon grated lemon zest
1 tablespoon dried lime blossoms
2 cups boiling water
Place hawthorn berries, lemon zest and lime blossoms in a warmed ceramic or glass teapot.
Add boiling water and let steep for 10 to 15 minutes.
Strain and drink hot or cool. Drink 1 to 2 cups of the tea each day.
